Nước Chấm- dipping sauce

6 tbsp water
2 tbsp sugar
2 tbsp fresh lime juice (to taste)
2 tbsp fish sauce (to taste)
1 red thai chile- chopped small
1/2 carrot- shredded
(optional) add some chopped fresh ginger to replace the garlic traditionally found in this recipe

Heat the sugar and water so that the sugar dissolves, then take off the heat and add the lime and fish sauce to taste. Finally add the chile, shredded carrot, and ginger.
