Tropical rice pudding

This recipe is a twist on the traditional german rice pudding, milchreis. Not only does the use of coconut milk make this recipe dairy- and lactose-free, it adds a lovely flavor. Serve it together with a serving of safe tropical fruits like pineapple, passion fruit, kiwi or guava for a real treat!

Tropical rice pudding
(8 servings)

1/2 cup round (short) grain rice
2 (400 ml) cans of coconut milk, well shaken
1/2 cup water
1 lime
1/2 cup sugar

1. Mix the rice, coconut milk, water and the peel (1 big piece, not zest) from 1 lime in a medium sized pot.
2. Heat on medium heat until it boils and then lower heat immediately. Let simmer for 45 minutes with the lid on, stirring occasionally (or frequently if not using a non-stick pot).
3. Remove the lime peel and mix in the sugar. Add a squeeze of lime juice. Let simmer an additional 15 minutes.
4. Serve warm or cool, optionally with a serving of safe fruit.
